Don't throw the liquid from your can of chickpeas. Use it to make egg-free meringues.

Simply by adding a little cream of tartar the liquid from a can of chickpeas can be whipped up just like egg whites. It's a special vegan miracle!


6 tbsp aquafaba (liquid drained from a can of chickpeas) 

½ tsp cream of tartar 

¾ cups of caster sugar

½ tsp organic vanilla paste (or pure vanilla extract)

This moist and tasty cake is ideal for for the autumn season ... or any other time you have spare pumpkins or butternuts at hand.

 You can make this as one cake using a ring tin or into two loaves using two regular loaf tins. Loaf tin sizes can vary but they are generally around 12 x 20 cm.
